Crumbly the yeast, dissolve it with sugar and a little water.

Let it foam.

Heat the milk.

Add to the yeast the rest of the water, milk, oil, salt, and half of the flour.

Mix well then incorporate the remaining flour.

Knead the dough thoroughly for about 10 minutes until it is homogeneous and elastic.

Let it rise and double in volume in the covered bowl for about 1 hour.

Knead again for 5 minutes.

Shape a dozen or more braid about 30 cm long.

Shape them into pretzel form, then place them on a greased baking sheet.

Bake for 10 minutes in the upper part of the oven.

Dilute the egg yolks with a little water.

Remove the pretzels, brush them with egg yolks and sprinkle with large grains of salt.

Return to the center of the oven and bake for 25 minutes.
