Fried squid and lemon aioli
One of the typical Spanish tapas for an aperitif under the sun!

Clean and wash the squid thoroughly under plenty of water.

Cut them into rings and soak them in a mixture of one teaspoon of lemon juice, olive oil, salt, and pepper for 30 minutes.

In the meantime, whisk the egg yolk with chopped garlic and a teaspoon of lemon juice in a bowl.

Gradually add the olive oil and incorporate one tablespoon of water.

Whisk until the sauce thickens and emulsifies.

Season the aioli with a pinch of salt.

Dry the squid then coat them in flour, beaten egg, and again in flour.

Fry them in hot vegetable oil.

Serve the tapas hot with the aioli sauce.
