Slice the mushrooms, cut the zucchini lengthwise into thin slices, chop the shallots (or onion), along with the garlic.

In a 36 cm non-stick sauté pan, heat the fat over medium-high heat and fry the mushrooms, zucchini, and shallots, stirring occasionally until they are tender.

Add the garlic and cook for 1 minute.

Reduce the heat and pour in the beaten eggs for an omelette, thyme, and pepper.

Using a spatula, bring the edges of the omelette back, and move the pan to allow the mixture to settle at the bottom.

Cover and cook on low heat for 5 minutes.

Let it grill for 2 minutes or until the dish takes on a golden color.
