    Fry the chopped onion in a pan with olive oil, add the tomato coulis and Provence herbs, season with salt and pepper.

    Let it reduce uncovered for 15 minutes. Wash the spinach and blanch them for 2 minutes. Drain them and puree with ricotta and gorgonzola, season with salt and pepper.

    Fill the cannelloni with this preparation and place them in a rectangular dish.

    Cover with tomato sauce, sprinkle with parmesan on top, bake and let it cook for 25 minutes.
