Butterroll the shoulder with a mixture: oil, chopped thyme, salt, and pepper.

Thread the butterroll, well centered, and bake in the oven for about 40 minutes.

During cooking, brush with the oil-thyme mixture.

Cook the fresh peas, previously peeled, in boiling salted water with a few sprigs of thyme added.

Serve the butterroll hot on a warm plate, surrounded by drained fresh peas enriched with fresh butter.
