Spinach Roll-ups
The spinach is making an appearance at the appetizer, and it's delicious!

Cook the spinach gently until all the water has evaporated, drain them in a colander and finely chop them.

Sauté the chopped onion with olive oil until it becomes transparent, add the chopped spinach, grated nutmeg, salt, and pepper, stir constantly, then add the shredded Parmesan.

Cut the leaves into rectangles, place them under a damp cloth to prevent drying out.

Brush the phyllo sheet with olive oil, place two tablespoons of filling along one side, fold the edges over and roll carefully to form a cigar (do not press too hard to avoid tearing).

Place the cigars on an oiled baking tray.

Bake in a preheated oven at 210°C for 20 minutes until well golden.

Serve in a dish.
