    Sear the scallops with a tablespoon of olive oil for a few minutes in a pan.

    Place them in a saucepan with the wine and let it reduce.

    Peel and chop the onion and shallot, then sauté them in a skillet with the olive oil until they are soft.

    Chop the mushrooms and leeks and add them to the skillet.

    Once cooked, add the vegetables to the scallops and add the heavy cream.
