Ingredients
Instructions
-
1
Prepare the cane sugar syrup: in a small saucepan, heat 100 g of cane sugar with 100 ml of water until completely dissolved. Let cool (or use ready-made cane sugar syrup).
-
2
Gently wash the berries and pat dry. Set aside a few beautiful whole berries for decoration. Wash the mint and pick the leaves from the stems.
-
3
In each glass, place about ten mint leaves and 2 lime wedges. Gently press with a muddler to release the aromas without crushing the leaves.
-
4
Add a handful of mixed berries to each glass. Lightly crush them with the muddler to release their juice and color while keeping some pieces intact.
-
5
Pour 2 tablespoons of cane sugar syrup and the juice of half a lime into each glass. Stir gently with a long spoon.
-
6
Fill the glasses three-quarters full with crushed ice or cracked ice cubes.
-
7
Top up with well-chilled sparkling water, pouring gently to preserve the effervescence. Give one last gentle stir from bottom to top.
-
8
Garnish each glass with a sprig of fresh mint, a lime wheel and a few whole berries placed on top of the ice. Serve immediately with a straw.
Chef's tips
Additional information
The berry virgin mojito is the ideal drink for hot summer days. This mocktail borrows all the hallmarks of the famous Cuban cocktail — the freshness of mint, the zing of lime, the sparkle of sparkling water — adding the colorful sweetness of mixed berries while completely eliminating alcohol. The result is a festive and sophisticated drink accessible to everyone.
The Art of Muddling
Muddling is the act of gently pressing the mint and lime at the bottom of the glass to release their aromas. This is a crucial step that makes all the difference between a mediocre mojito and an exceptional one. The golden rule: press, don't crush. The mint should be gently pressed to release its essential oils, but never torn or shredded, which would release unpleasant bitter notes.
For the berries, crush them lightly with the muddler so they release their juice and color, while keeping some whole pieces for texture and presentation. Raspberries and strawberries muddle easily, while blueberries are more resistant — a few whole ones at the bottom of the glass will provide lovely flavor surprises.
The Secrets of a Great Mocktail
A good mocktail doesn't simply remove the alcohol from a cocktail: it must offer a complexity of flavors that compensates for the absence of spirits. The cane sugar syrup brings sweetness and body, the lime provides acidity and zing, the mint delivers freshness and the berries add fruity depth. Well-chilled sparkling water and ice complete the ensemble by adding the thirst-quenching and festive element.
For an even more refined result, you can replace the classic sugar syrup with a raw cane sugar syrup, which adds more complex caramel and molasses notes. A few basil leaves as a replacement for or complement to the mint offer an original and delicious variation.
Presentation and Service
Serve your mojito in tall highball glasses or mason jars for a summery and casual look. Crushed ice is preferable to regular ice cubes as it chills more quickly and blends better with the cocktail. Garnish each glass with a sprig of fresh mint, a lime wheel and a few whole berries placed on top of the ice.
For a party version, prepare a large pitcher in advance by multiplying the quantities. Add the sparkling water at the last moment to preserve the effervescence. This virgin mojito is the perfect companion for a summer terrace aperitif, a barbecue with friends or an indulgent afternoon snack.
