    Soak the beans for 12 hours. Cook them in plenty of cold water for 5 or 6 hours.

    When the beans are half cooked, add the salt, chopped onion and garlic, oregano, and bell pepper.

    When the soup is cooked, pass it through a blender.

    The soup should have a fairly thick consistency; reduce if necessary.

    Add the cheese 10 minutes before serving.

    Serve with croutons.
