Fill the base of a steamer with water to half its height, submerge the eggs and bring to a boil, cover and cook the eggs for eight minutes so they are hard-boiled.

Meanwhile, cut the broccoli, slice the leeks in half, wash them then cut them into large rounds.

Cut the broccoli at the top of the steamer and cook for three minutes, add the leeks and cook for another two minutes.

Prepare the dressing by mixing lemon juice, olive oil, honey, capers, and tarragon in a bowl, season with salt and pepper.

Cool the hard-boiled eggs under cold water, remove them from their shells and cut them into pieces.

Mix the broccoli and leeks in the bowl with the dressing then add the hard-boiled eggs, garnish with tarragon and serve hot!
