    Peel and cook the butternut squash cut into pieces.

    Pass it through a food mill.

    In a saucepan, sauté the finely chopped onions in butter.

    Pour the puree in while stirring to mix.

    Let it simmer for 10 minutes.

    Off the heat, add the egg yolks, salt, pepper and a piece of fresh butter, stir and serve!
