Preheat the oven to th 7 (210°C).

Peel and dry the cooked potatoes.

Slice the potatoes thinly and cut the salmon into pieces.

Butter a gratin dish.

Place a layer of potatoes, then some pieces of salmon.

Season with pepper, then again place a thin layer of potatoes and salmon.

Fill the dish by alternating layers in this manner, and finish with a layer of potatoes.

Mix the eggs and milk in a bowl, gradually add the flour, and pour it into the dish.

Sprinkle with breadcrumbs.

Bake in a hot oven for about 40 minutes.
