    Melt the finely chopped shallots in the butter, sprinkle with flour, add the chicken broth and season.

    Add the cut-up leftover chicken and sautéed mushrooms flavored with a squeeze of lemon juice in butter or oil.

    Mix 1 egg yolk with 2 small cottage cheeses and 50g of grated gruyere, then join them together.

    Fill a pre-baked pastry tart base and bake for another 15 minutes in a hot oven.
