    Cut the chicken into pieces and brown them in butter in a casserole.

    Cover with water to the level of the ingredients, add sliced carrots, bouquet garni, seasoning, and chopped parsley.

    Cover and cook for 30 minutes on medium heat.

    When the chicken is cooked, remove the pieces and keep them warm.

    Reduce the cooking liquid by about a quarter, then strain it through a sieve.

    Thicken the resulting sauce with egg yolk and cream mixed with flour.

    Season to taste and add 1 tablespoon of fresh parsley chopped.

    Nestle the chicken in the sauce and serve.

    You can of course replace the water with a broth made from the poultry giblets; the sauce will be better.
