Foie gras brûlé
Crème brûlée with foie gras: a delicious starter disguised as a dessert, crunchy and melting!

Prepare the foie gras: cut it into dice and reserve in the refrigerator.

Meanwhile, in a saucepan, bring the milk and cream to a boil.

In a bowl, beat the egg yolks with sugar until they lighten in color.

The consistency should be frothy.

Gradually incorporate the milk-cream mixture into the eggs.

Mix well.

Add the foie gras cubes.

Season with pepper, add Sauternes and process the preparation in a blender.

Pour the foie gras cream into four ramekins.

Bake for 20 minutes in a water bath in an oven at 90°C.

Remove the ramekins from the oven and sprinkle each with sugar and a spice blend.

Let cool.

Candle with a kitchen blowtorch and let rest a few moments until the surface sets.

Add a pinch of sea salt to each cream and enjoy.
