Italian-style curly cabbage gratin

Soak the bread in a little water or milk.

Wash the cabbage and separate the leaves.

Keep about twenty leaves and remove the rib.

Blanch the leaves in salted boiling water for 15 minutes.

Drain on a towel.

Cut the rest of the cabbage into strips, and blanch for 5 minutes.

Chop the onions and bell peppers into cubes.
