Roll out the pastry on a baking tray and prick it with a fork.

Sauté the finely chopped shallots in a deep skillet until soft, then add the sliced leeks and cover.

While that’s cooking, cut the roquefort and ham into small cubes.

Place the roquefort on top of the pastry.

Beat the eggs with the cream, some salt, pepper, and a little nutmeg.

Once the leeks are well cooked, mix them with the ham and egg/cream mixture.

Spread this over the pastry.

Sprinkle with grated gruyère.

Bake for about 25 minutes.

Check that the bottom of the tart is properly baked and that it is golden on top, then serve hot.
