Peel and remove the seeds from the tomatoes.

Sauté the tomatoes until most of the water has evaporated, then add a piece of sugar according to taste to reduce their acidity, salt, and pepper.

Sauté the onions in a pan with olive oil until they are golden brown, adding the other piece of sugar for good caramelization.

Prepare the filling with the sautéed tomatoes, chopped bacon, onions, cream cheese, 2 eggs, gruyère cheese, basil, and a hint of salt but very little.

Place the dough in a baking dish (about 26 cm), fold the edges, prick the dough, and pour in the filling.

Top with slices of fresh tomatoes, some black olives, and basil.

Bake in the oven for 40 minutes at 180°C.
