Cut out 4 circles from your pastry and place them in the tartlet molds.

Sprinkle 10 gr of sugar (in total) over each mold.

Bake at 180°C / th. 6 for 5 minutes and set aside.

Prepare the leeks: slice them into strips and sauté them in a pan with a little butter and the spoonful of vinegar.

Separately, mix the remaining 30 gr of sugar, the egg, and the cream.
