    Remove the flesh from the avocados.

    Boil water in a pot, add the carrot sliced, onion, bouquet garni, and clove of garlic.

    Blanch the langoustines for 4 minutes, drain, and devein them.

    Place the avocado flesh, cooked and deveined langoustines, garlic, mustard, sour cream, lemon juice, salt, and pepper in the mixing bowl. Mix everything together.

    Divide the avocado cream among shallow plates or small bowls, and garnish with lemon slices.
