    Peel and cut the beetroot into thin slices. Chop the carrots into shreds using a vegetable peeler.

    Mix in a bowl the vinegar with peanut oil, then add the cream while stirring until you get a homogeneous vinaigrette.

    Add the cabbage and beetroot strips, the carrots, mayonnaise, and toasted pine nuts.
