    Slice the leeks and shallots

    Melt some butter in a pot, add sliced cucumber, 3 peeled and cubed potatoes, and cook with 2 liters of water for 20 minutes on high heat, season afterwards

    While that is cooking, peel the other cucumber, cut it into six pieces lengthwise, remove the seeds, and slice them into 3 mm thick slices

    Salt them and let them drain in a colander for about 20 minutes

    When the soup is cooked, blend it, pass it through a sieve, and cool it rapidly in an ice bath

    Once cooled, add the heavy cream, drained cucumber, and chopped chives

    Adjust the seasoning and pepper

    Serve chilled.
