Melange of chocolate and love
Prepare a Valentine's Day dessert with the mix of chocolate and love.

For the chocolate mousse:

In a saucepan, melt the chocolate.

Beat the 4 egg whites into stiff peaks, with a pinch of salt.

Pourse over it the melted chocolate, leaving about 2 large tablespoons in the pan.

Gently fold to avoid breaking the whites!

Fill the glasses halfway with this mousse, and cover with melted chocolate, smoothing so that all the surface is covered.

Refrigerate for at least 2 to 3 hours.

For the pastry cream:

Temper the 2 egg yolks, with 100 g of sugar and vanilla sugar.

Then add the flour (50 g), and mix.

Add a little milk to make the mixture easier to work with.

Remove all lumps.

Heat the rest of the milk.

After a few minutes, when it is warm, add the mixture and beat with a whisk until boiling.

The cream should be quite thick, when you stop cooking shortly after boiling.

Fill the glasses with this cream, leaving about 2 cm free.

Refrigerate for 2 hours. Before serving, put a spoonful of praline on the surface of each glass.

For the whipped cream:

Beat your cream in an electric whisk bowl that has been in the refrigerator for 15 minutes.

Continue until you get a firm chantilly.

Fill the rest of the glasses, and let it overflow at the top of each one.
