Saint-Amour Cake

Bake the pastry for 12 minutes in a preheated oven at 180°C (Th.6).

Mix the white cheese with 125 g of sugar, flour, Maizena, vanilla sugar, lemon zest, and the 7 egg yolks.

Beat everything vigorously (or use an electric mixer).

Whip the egg whites to firm peaks with a pinch of salt and the remaining sugar.

Gently mix the whipped egg whites and butter into the white cheese. Pour the mixture onto the pre-baked pastry and bake for 40 minutes. About halfway through baking, remove the cake from the oven and run a knife between the crust and the cake to reduce the risk of it sinking.

After 40 minutes, take the cake out of the oven and let it cool.
