Skin the sea bream.

Rinse it and dry it.

Chop the shallots, garlic, and parsley.

Mash the mixture with the juice of half a lemon.

Stuff the cleaned sea bream with this mixture.

Make incisions on the top of the sea bream and insert a slice of lemon into each incision.

Brush the fish with oil.

Alternate slices of tomato and lemon in layers.

Season with salt and pepper.

Sprinkle with thyme, bay leaf, and chopped rosemary.

Bake in moderate oven for 30 minutes. Serve with rice.
