Mackerel in Mushroom Sauce

Wash and dry the tuna steaks.

In a bowl, place the tuna steaks, lemon juice, thyme, salt, and pepper, let marinate for 30 minutes.

Heat oil in a pan and sear the tuna steaks on both sides.

Melt butter in a pan, add flour in a stream, add chopped mushrooms and chopped parsley, deglaze with fish broth and cook for 25 minutes.

Beat the egg yolks with a little lemon juice and pour them into the mushroom mixture, stir with a wooden spoon until you obtain a sauce.

Serve the tuna steaks on a plate and drizzle with sauce, wash and cut tomatoes, add two quarters per plate.
