Fry the cubed potatoes, add the sliced onions, salt, and pepper.

Remove them, and fry 8 slices of smoked bacon.

Remove the crust from around the reblochon, and scrape the top.

On a bed of pastry dough (or flaky pastry), spread the potatoes, place the bacon and reblochon on top.

Bake for 25 minutes in a moderate hot oven (thermostat 6/180°C).
