    Slice the onion and the leeks after removing their green parts and roots.

    Sauté the onion in two tablespoons of olive oil.

    Add the sliced leeks and cook over medium heat, adding a little water if necessary, for about 25 minutes (taste to check that the leeks are tender).

    At this point, add the grated cheddar and let it melt.

    Once the cheese has melted, add the cream, mix well, and remove from heat.

    Keep warm.

    Cook the salmon: season the fillets on all sides.

    Sear them in hot olive oil starting with the skin side down (to prevent the skin from peeling off while cooking).
