Salmon with green lemon sauce

Prepare the smoked salmon butter: pass the smoked salmon through the grinder.

Chop the chives finely.

Mix the smoked salmon, chopped chives, 1/4 of the beaten egg, and softened butter. Season with salt and pepper.

Scrape the zest from the 1/4 green lemon (remove the white pith) and finely chop it, then set aside.

Prepare the lemon sauce: reduce the dry white wine and Noilly Prat with the chopped shallot until almost reduced to a glaze.

Add the fish stock, reduce by half, then pour in the heavy cream and bring back to a simmer. Season with salt and pepper.

Remove from heat and whisk in 15g of butter and a dash of green lemon juice into the sauce.

Strain through a fine sieve and set aside.

Place the two salmon fillets on a baking dish.

Spread the smoked salmon butter over the two fillets, smoothing it carefully. Then bake for 2 to 3 minutes in your oven's grill.

Sprinkle with breadcrumbs to absorb any excess fat, then serve on a plate.

Surround with the green lemon sauce and sprinkle with finely chopped green lemon.
