Grate the zucchini and let it drain with salt for 25 minutes.

Preheat the oven to 180°C (gas mark

Place the dough in a tart pan and prick it with a fork.

Blind bake the dough for 10 minutes.

Drain the zucchini and set aside.

Prepare the custard: In a mixing bowl, beat the eggs with the cream, milk, add herbs, nutmeg, and salt.

Generously pepper and gently mix.

Once the dough is pre-baked, distribute the trout at the bottom, place the zucchini on top, and sprinkle with mozzarella cubes.

Spread grated Gruyère or Parmesan cheese over it, then pour the custard.
