    Cut the pumpkin into 1 cm cubes.

    Heat 3 tablespoons of olive oil in a sauté pan or large pot.

    Add the onion and garlic and gently sauté over low heat for 3/4 minute.

    Add the parsley and continue cooking for 1 minute.

    Add the pumpkin pieces and cook quickly over high heat for 2/3 minute.

    Season with salt, pepper, and add a pinch of nutmeg.

    Add two-thirds of the stock (20 cl) and bring to a boil.

    Cover and simmer quickly over high heat for about 10 minutes (or until the pumpkin is tender).

    Add more stock during cooking if necessary as you don't want the pumpkin to dry out or burn.

    Add the ham and cook for 2 minutes.

    While this is cooking, cook the tagliatelles in a large pot of salted boiling water with the remaining tablespoon of oil according to the time indicated on the pasta packet.

    Drain them and transfer them to the serving dish.

    Add the cream to the pumpkin and ham mixture and heat through while stirring.

    Top the tagliatelles with this sauce and serve with grated parmesan.
