Tagliatelles with asparagus tips and bacon
Add some color to your tagliatelles with a preparation of asparagus and bacon.

Wash and peel the asparagus, cook them in salty boiling water for 20 minutes, drain them and save the cooking water.

In a sauté pan, fry the lardons in 10 g of butter.

Deglaze with a ladle of asparagus cooking water, add the Gervais cheese, cream, and the remaining butter.

Stir using a whisk and cook for 20 minutes.

Add the chopped asparagus (save the tips for decoration) and keep warm.

Cook the pasta in salty boiling water, drain it, pour it into the serving dish, add the asparagus preparation, sprinkle with grated Parmesan, place the asparagus tips on top, and serve immediately.
