Tartlet of Shrimps with Grapefruit

De-shell the shrimp and cut them into small pieces.

Peel the grapefruit, remove its pith, and cut each slice into four pieces.

Drain the crab meat.

Wash the bell pepper, cut it in half, remove the seeds, and slice it into strips. Sauté these strips in a pan with olive oil and then blend them.

Mix in a bowl the 2 yogurts, the blended bell pepper, finely chopped basil, red berries, coriander, and honey until you obtain a homogeneous mixture. Add the crab meat flakes and shrimp.

Shape this preparation into 4 equal portions.

Place a piece of grapefruit in each serving glass, then pour one portion of the previous preparation over it. Chill the whole, garnish with an un-de-shelled shrimp and a basil leaf. Serve chilled.
