    Chop 250 gr of chocolate and melt it in a saucepan with 120 gr of butter. In a mixing bowl, beat the egg yolks and sugar until the mixture lightens.

    Then add the melted chocolate and flour.

    Break 6 eggs and separate the yolks from the whites. Whip the egg whites into stiff peaks with a pinch of salt.

    Fold them into the previous mixture.

    Line your baking sheet with parchment paper and spread the preparation over it.

    Bake in the oven for 15 min. For the cream: In a mixing bowl, pour 380 gr of chestnut cream into a bowl with 200 gr of softened butter. Add 3 tablespoons of rum and mix, then refrigerate. For the glaze: Chop 150 gr of dark chocolate and melt it in a saucepan with 250 gr of butter. Add 200 gr of powdered sugar and 20 cl of cream and mix. For the decoration: Turn the cookie over onto a damp kitchen towel. Spread the cream over the entire surface of the cookie, then roll it up. Spread the glaze over the log cake and sprinkle with some dark chocolate shavings. Refrigerate for at least 10 hours, and dust with powdered sugar before serving.
