Asparagus Quiche
A very spring-like quiche recipe made with asparagus.

Prepare the dough: incorporate the sieved flour with salt into butter pieces by working quickly with your fingertips.

Moisten with water to be able to roll the dough into a ball and let it rest in the fridge for at least 1 hour. Peel the asparagus and cook them for 15 minutes in boiling salted water, then drain.

Separate the tips from the stalks, cut these into small pieces and beat the eggs whole with the cream and seasoning, add the asparagus pieces.

Roll out the dough with a rolling pin and line a buttered tin.

Pour the asparagus cream mixture over it.

Garnish with the asparagus tips arranged in a star pattern.

Bake for 40 minutes at hot oven setting (200 °) reducing the heat slightly towards the end of cooking.
