    Cut the artichokes in half lengthwise, remove the choke and rinse them in slightly lemon-squeezed water.

    Place them on a baking dish (leaves at the bottom) and drizzle with a little olive oil.

    Grill them on a barbecue over coals placed as far as possible from the heat source to cook them gently.

    The first leaves may be slightly charred but that's normal.

    When the artichokes are cooked, transfer them to a serving dish, drizzle with a thin layer of olive oil and sprinkle with fleur de sel.

    Serve hot.
