Spicy Seasoned Chicken Salad

Peel the tomato, remove the seeds and cut it into cubes.

Reserve in a bowl.

Cut the half mango into cubes (you can use frozen mango even without defrosting).

Add it to the tomatoes.

Chop the half shallot and add it to the previous mixture.

Season, add one good tablespoon of olive oil and a quarter teaspoon of vinegar.

In a bowl, mix the breadcrumbs, curry powder, and a pinch of salt.

Cut the chicken breasts into 2 to 3 cm cube.
