Brown all sides of the roast in a Dutch oven with olive oil.

Rinse and finely slice the mushrooms.

Mix them with butter, lemon juice, and chopped parsley. Incorporate the egg yolk and sour cream.

Unroll the pastry and place 1/3 of the preparation at the center. Place the beef roast on top and cover it with the remaining mushrooms.

Brush the pastry with milk and fold the dough to enclose the roast.

Glaze the crust with egg yolk.
