    Chop everything (with a coarse grater).

    Finely chop and blend the garlic, shallots, and parsley as finely as possible.

    Mix them with the meat along with all other ingredients, kneading everything carefully.

    Fill about 10 jars with this preparation, place them in the sterilizer, and cover them generously with water.

    Count 3 hours of sterilization from the boil.

    Let the jars sit in the water until completely cooled.
