Cut the apples into quarters and brown them in a Dutch oven with duck fat (from the confit box).

Slice the onions and sauté them in olive oil. Add cinnamon, pepper, and salt.

Pour in the spoons of honey, vinegar, and chicken broth.

Cook for 15 minutes.

Meanwhile, brown the duck thighs in the oven on broil setting.

Place the duck thighs over the onions and add the apples, dates, and simmer for 10 minutes on low heat.
