    For the cream:

    Heat the milk and vanilla sugar in a saucepan.

    Mix the egg yolks with the sugar in another saucepan until the mixture lightens.

    Sift in the cornstarch gradually, then slowly add the warm milk, put the saucepan on low heat and stir constantly for 5 minutes until the mixture thickens.

    For the pastry:

    Place in a saucepan the water, salt, sugar, cut butter, bring to a gentle boil over low heat, remove from heat and add the yeast.

    Then gradually mix in the sifted flour with a wooden spoon until a dough forms.

    Using your fingers, stretch the still warm dough into a rectangular tart pan (without greasing the pan), pour the cream onto the bottom of the pan.

    Bake in a preheated oven at 190°C for 20 minutes.

    Cut the kiwi slices in half.

    Garnish the tart with the kiwis.
