Lemon Squares
Lemon squares are a typical New York recipe, ideal for tea time or dessert!

In a bowl, mix the flour and 60 gr of sugar.

Melt 120 gr of butter and incorporate it into the mixture.

Grease a square pan and pour the dough inside.

Press with your fingers to spread it evenly.

Bake for 12 minutes at 180°C. Preparation of Lemon Cream:

Separate the egg whites from the yolks and put them in a bowl.

Zest one lemon and extract its juice.

Add to the eggs and beat the mixture, gradually adding the sugar.

Pour the preparation into a saucepan and heat on low heat for 2 minutes.

Gradually add the remaining butter (100 gr) and let it cook on the stove for 15 minutes.

Remove from heat, let cool, and pour the cream over the base.

Refrigerate for 3 hours and cut into squares before serving.
