Wipe the apples, remove the stems, and insert a wooden skewer deep into the stem hole.

Heat the sugar and water over high heat to make a syrup, then add the butter and food coloring.

Increase the temperature to reach 140°C.

If you don't have a thermometer, drop a little of the syrup into a bowl of cold water; it should harden quickly.

Dip the apples one at a time in the thick syrup, coat them well, and plunge them into cold water as you go.

Drain them and place them on a greased aluminum foil.
