    Wash and chop the mushrooms, peel and chop the onion.

    Fry it in butter, add the mushrooms, sprinkle with flour, deglaze with broth, cook for 45 minutes (15 minutes in a pressure cooker).

    Pass or blend the soup, thicken with beaten egg yolks and cream, adjust seasoning.

    You can sprinkle with chopped parsley to taste.
