Wash the zucchini and slice them without peeling them.

Peel the potatoes, wash them, and also cut them into slices before blanching them for 5 minutes in boiling salted water.

Blanch the tomatoes to peel them.

Remove the seeds and chop the flesh into dice.

Chop the parsley and the peeled garlic clove.

Oil a baking dish and layer the potatoes and zucchini with diced tomatoes inside it.

Sprinkle each layer with parsley, garlic, and coriander.

Season with salt and pepper.

Drizzle with the remaining oil and cook covered for 25 minutes in an oven preheated to 180°C.
