    Peel and finely chop the onion and carrot.

    Sauté them gently in oil.

    Place the pork roast on top and brown it on all sides.

    Season, deglaze with white wine and simmer slowly for 45 minutes, basting occasionally with the warm broth.

    Meanwhile, grind the almonds.

    Once the roast is cooked, strain the sauce and add the almonds to it.

  7. 7

    Drizzle the almond thick sauce over the roast and return it to the oven at 180°C for a few minutes to reheat.
