Peel and cut the carrots into slices

Rinse the quinoa under cold water.

Pour 3 cups of water, place the quinoa and carrots with a drizzle of olive oil in a pot, season, bring to a boil, then cook for 15 minutes on medium heat.

Cut the chicken breasts into pieces and gently cook them in a pan with a drizzle of olive oil (about 10 minutes).

While this is cooking, chop the parsley.

Add the cooked chicken pieces to the quinoa and carrots, sprinkle with parsley and mix well.
