Peel the potatoes.

Peel and chop the onion, then sauté it in a pan with the leeks and 1 tablespoon of olive oil, stirring well.

Add the potatoes along with the broth, then fill with water until the vegetables are submerged.

Simmer on low heat for 20 minutes.

Pour in the heavy cream and reduce to thicken the sauce, then add the mustard.
