Peel the skin off the salmon.

Remove all peripheral bones being careful not to damage the fish;

Use tweezers if necessary.

Once this is done, slice the flesh into very thin fillets using a well-sharpened knife, working almost parallel to the central bone.

Mix the juice of half a squeezed lemon with three tablespoons of olive oil, add some finely chopped thyme sprigs and bay leaf.

Salt and pepper to taste.

Dry the fresh salmon fillets.

Place a slice of smoked salmon and a basil leaf on each one.

Roll into a roulade shape and secure with a wooden skewer.

Pan-fry them for 5 minutes in very hot butter.

Drizzle with the cooking butter.
