Preheat your oven to 180°C (Gas Mark.

Peel the potatoes and boil them in boiling water for 30 minutes.

Meanwhile, trim the fat off the duck legs, debone them, then set aside.

Peel and chop the onion and garlic clove.

Heat the oil in a pan, then add the onion and garlic.

Stir occasionally. Add the duck legs.

Dice the tomatoes.

Cook them in the pan with the duck.

Sprinkle with chopped parsley, then season to taste.

Mash the potatoes using a potato ricer or mash them with a fork.

In an ovenproof dish, place the duck preparation at the bottom, then add the mashed potatoes on top.

Sprinkle with grated cheese.

Bake for 15 minutes to gratinate the cheese.
